Zucchini has quickly climbed the ranks into my top 5 favorite foods (foods, not dishes, just to be clear). Along side asparagus, shrimp and cheese, it is something I could eat everyday. I’m sure somewhere, behind  her sewing machine and amidst her home design magazines, my mother is overcome with a sense of victory as I have finally started eating my vegetables. Mom is really always right.

Today I decided to experiment a la pinterest and add a fun twist to an easy potato recipe by adding in my new favorite veggie; the zucchini. I made these super easy (I mean it, if I can do it then anyone can) potato and zucchini parmesan stacks that are so tasty and are actually decent for your body.

I am by no means an experienced lady in the kitchen so anytime I find something easy, yummy and healthy I feel like Gordon Ramsey.

1. Gather your ingredients

There aren’t many and feel free to replace them with items in your kitchen that you prefer. You will need 1 potato (I went russet), one zucchini, parmesan cheese (sliced is ideal but shredded is fine) and olive oil. Then you can add whatever spices you like, but I kept it simple with salt, pepper, garlic and onion powder.

2. Peel and slice your veggies

Pretty self explanatory. I used a blade insert for my spiralizer to cut the potato and zucchini into thin slices.

3. Toss them with olive oil, salt, pepper, and garlic powder in a bowl

Just make sure they’re all covered!

4. Start stacking!

After using  a paper towel to oil up the muffin tin, start stacking your veggies! Potato slice, then a sprinkle of parmesan, zucchini slice, parmesan, poatoe, repeat. Add a little bit more cheese on top as the finishing touch!

5. Bake for 15 minutes on 375

And you’re done!

I dipped mine in some sriracha ranch, therefore making my healthy snack not healthy at all. And now that I think about it, potatoes and cheese aren’t necessarily the healthiest option either. But anything is healthy if you add zucchini right? Right!

I too am a new lover of zucchini! I just started to like it a couple years ago! Therefore, I will definitely be trying this recipe! I’m always in need of a “healthy” snack or something easy to bring to school for lunch!
