I have eaten a lot of truly delicious things since the last recipe recap and I am so excited to share everything with you!
In terms of my *skillz* things are certainly improving! I definitely have a better grip on timing/temperature/flavors and it’s been so fun making new tasty recipes every week.

BUCATINI & ANCHOVY SAUCE
Alison Roman, you god damned GODDESS!
This recipe is saucy and tomatoey and salty and truly delectable. If you don’t like anchovies I think you’re an unadventurous human but alright. The choves (lol) melt into the sauce and add this amazing salty quality that is so f*cking delicious you will die.
Plus bucatini is definitely in my top 3 favorite pasta shapes so I am a huge fan. It’s like spaghetti but sexier.
I made this for my cousin at 9 pm on a Tuesday and the only thing that stopped us from eating all of it was that it literally was putting us to bed with how delicious and decadent it is.

ROSEMARY CHICKEN & POTATOES
Another fabulous AR recipe (my new nickname for her because we are friends in my mind) that was super simple with minimal ingredients yielding maximum levels of deliciousness.
It’s just chicken legs, tiny potatoes, rosemary, garlic, and olive oil my friends. Her recipe calls for sour cream and chives (drool) for dipping afterward but I made it as my weekly meal prep so I tried to keep it a bit healthier.
It does take a long ass time (325 for 1.5-2 hours!) but it’s so worth it. You take the chicken grease from the baking dish and put it in a skillet afterward so you can crisp up the skin on the legs and it is divine. I made the same recipe sans potatoes and with chicken thighs this past weekend and it was also delish.

BURRITO BOWLS
I am proud to say this is my own creation, albeit not very a creative or unique one. I love a good healthy burrito bowl for my meal prep. It’s super easy, tasty and you can put whatever you want in it!
Ingredients:
- Cauliflower rice
- Green chiles
- Corn
- Black olives
- Tomatoes
- Green and red bell peppers
- Refried black beans
- Ground turkey
- Vegan shredded mozzarella
- Trader Joe’s Taco Sauce
- Trader Joe’s Jalapeño Sauce
- Salt, pepper, chili powder, cumin, oregano, smoked paprika, and garlic powder
Instructions:
- Sautee the cauliflower rice in olive oil, butter or vegan butter (what I use) until soft. Add all of the spices listed above.
- Add corn, green chiles, black olive, refried beans, and tomatoes to the pan and begin to mix together.
- In a separate pan cook the ground turkey, breaking it up into smaller pieces with a wooden spoon and seasoning it with the same spices.
- Add the turkey once cooked completely to the other skillet and add as much of the taco sauce (it tastes like taco bell hot sauce so I add a lot, yum!) as you’d like.
- Add the cheese and let it melt as you stir it all together
- I added some roasted broccoli at the end, but add whatever veggies you like!
- Top with TJ’s jalapeño sauce and thank me later!
CACIO E PEPE & ASPARAGUS W/ CHILLI OIL
I had a friend over for a little sleepover a few weekends ago and I had to make pasta because 1. any excuse and 2. she’s Italian and I wanted validation that I can cook pasta perfectly.
I got the recipe from Back Pocket Pasta by Colu Henry but if you’re familiar with the dish, it’s very simple. Cheese, pepper (lol duh), pasta and butter! It’s very hard to mess up and it’s delicious.
I made AR’s asparagus on the side with Aleppo pepper oil and garlic. Delish!

CITRUS SALMON
Salmon is probably my favorite fish and I make it often, so I was excited to see this drool-worthy recipe in Dining In! It’s lots of herbs (hello dill! hello cilantro!), citrus (I used lemon and orange slices) and olive oil all over perfectly cooked salmon. The result is melt in your mouth perfection. Somehow buttery without butter and truly delicious until the last bite.

GARLICKY WHITE BEANS W/ GROUND TURKEY & MASHED CAULIFLOWER
I was trying to get creative with the other half of the ground turkey I had in my freezer so I found this yummy garlicky white bean recipe in Dining In and decided to kind of do a weird mashup situation. It was okay.
The beans started out SO good and I couldn’t stop eating them out of the pot but the recipe calls for you to let them get a little crisp and I think I overdid it so they went from super delish to a little dry. Womp womp. Next time I will take them off the heat sooner!
I just cooked the ground turkey with salt, pepper and garlic powder and plated everything over some mashed cauliflower rice. It was good. Not great. But good.
A CLASSIC MARINARA
God damn it, you guys, red sauces continue to be my downfall. Maybe because I just love a creamy, buttery, cheesy sauce situation so much that my heart just isn’t in it when it comes to red sauces?? But I do love tomatoes so I really need to get it together.
This was in Back Pocket Pasta and is just a classic marinara with cavatappi (a very fun pasta shape I love!). My mistake here once again was I added too much water which left the sauce very thin. I followed the recipe exactly which I guess I need to stop doing if I feel like things are going south.
It only has you cook down the onions for 4 minutes and I don’t know if you’re ever met an onion that cooks down that fast but I sure f*cking haven’t!
Next time I’m going to 1. cook the onions and garlic down way longer 2. add tomato paste 3. not fill up the tomato can with water and add it (I’ll just add some of the starchy pasta water) and 4. not cook the pasta until the sauce has cooked down and simmered for a loooong time so I don’t feel rushed!
All in all, it was actually very tasty, just not perfect. I will be reattempting soon!

LEMONY BUTTER SALMON W/ DILL
Okay, now I can’t decide if I love this one or the citrus salmon recipe more because they are both INSANE!
This is from Alison Roman’s newest cookbook, Nothing Fancy, which I tried desperately to resist buying but in the end, I just couldn’t help myself. And I’m so glad I couldn’t because there are so many fun recipes in there I can’t wait to try!
I love that her salmon recipes truly just involve putting delicious things on the fish and baking it. Nothing fancy (ah, I get it!) and so simple and easy. This one has you slice up red onion and lemon and put it in a hot pan with butter, capers, and dill. Then you pour it over the salmon and cook it for 10-12 minutes until it’s on the medium rare side (my favorite!). The result is another melt in your mouth moment that you will savor and think about for the rest of your life.
The only thing I would do differently is when plating I wouldn’t add all of the oil from the baking dish LOL it was a lot.
